ENTAJ chicken Marty Saudi way

Preparation time: 1 hour


Rice 2 cups
Carrot cubes 1 cup
Potato cubes 1 cup

Boiled peas ½ cup
Vegetable oil 4 tbsp (60 ml)
Chicken broth 4 cups (1 liter)
Cardamom 5
Salt (as desired)
Oil for frying

Salt, black pepper and cardamom (as desired)

How to prepare it:

• Heat the oven to 220°C.
• To prepare the chicken: mix the chopped onion, spices, and salt well. Stuff the chicken with the onion mix.
• Boil the chicken in water for 10 minutes, then put it in the oven tray and leave it for 30 minutes or until it becomes tender and golden in color.
• Boil the rice with chicken broth for 5 minutes, then cover the pot and leave them on low heat for 20-25 minutes to simmer.
• In the meantime, heat the oil to fry the onion slices, carrots, potatoes and green peas.
• Put the rice on the serving plate and decorate its sides with potatoes, carrots, green peas. Put the chicken over the rice and decorate it with the roasted onions.
• Serve the dish with tomato pepper sauce: mix 1 tomato in a blender; add the sectioned pepper, 1 teaspoon of minced garlic and 2 tablespoons of lemon juice and a little bit of salt.
