Halloumi cheese ENTAJ chicken rolls with sauce and mint

4 persons per serving
Preparation time: 25 minutes

Ingredients:


ENTAJ Chicken breasts  4
Red sweet pepper 2
Halloumi cheese 150 g
Dried oregano 1 tbsp
Olive oil 2 tbsp (30 ml)
Onion 1
Flour 2 tbsp
Mustard 1 tbsp
Tomato 1
Chicken broth  2 1/2 cup (625 ml)
Fresh mint 1 1/2 tsp
Black pepper (as desired)


How to prepare it:

• Put water in a pot on the fire to boil. Then add the red pepper and cook it over a low heat for 3 minutes. Keep it to cool, drain it from water, peel it and put it aside.
• Put the chicken slices between two sheets of waxed paper and knock it with a pestle to get a thin layer of equal thickness.
• Put a slice of red sweet pepper on the chicken fillet (cut the sweet pepper to match the size of the slice of chicken) and then add the cheese and a pinch of oregano. Wrap the fillet and hold it with a toothpick.

• Heat the olive oil in a large non-stick pan and add the chicken rolls and fry it from all sides to obtain a brown color. Raise the chicken off the fire and put them aside.
• Add the onions to the pot and stir for two minutes. Then add the flour and stir for two additional minutes. Add mustard, tomatoes, chicken broth and black pepper and stir the mixture to boil and cook it on a low heat for 10 minutes, stirring from time to time.
• Mix the sauce in a food blender and pour it in a clean pot.
• Take off the toothpicks from the chicken and add it to the sauce. Cook the mixture on a low heat for 8 minutes or until the chicken is well cooked. Add the chopped mint and cook on a low heat for two minutes and serve the dish.
