ENTAJ Chicken and Vegetable Cigars

10 persons per serving
Preparation time: 55 minutes

Flour 2 cups (240 g)
Margarine or oil 1 tbsp (15 ml)
Water (as needed)
A pinch of salt

ENTAJ Chicken stuffing:
ENTAJ Chicken breasts 4
Red onion 1
Green pepper 1-2
Garlic 1-2
Mozzarella cheese 1/4 cup
Tomato 1
Ground ginger 1 tsp
Rice vinegar 1 ml
Coriander 1/4 pack
Oil 1 tbsp
Frying oil  500 ml
Salt (as desired)

How to prepare it:

• For the dough: In a bowl, combine the flour, oil and salt, then add enough water to make dough flexible. Knead well until smooth.
• Filling: chop the onion, peppers, garlic, tomatoes, coriander and cut the chicken breasts to produce small cubes.
• Heat the oil in a frying pan then add chicken and chopped vegetables (onions, peppers, garlic, and tomatoes), ginger, rice vinegar, salt, and fry for 8-10 minutes.
• Remove the pan from heat and add mozzarella cheese and coriander, and mix well.
• Cut the dough into balls, then press well to make them very thin and cut them into rectangles.
• Stuff the rectangles of dough with a spoon of the chicken mixture, turn the edges and wrap them up like a cigar. Close the edges with a mixture of flour and water.
• Fry in the hot oil until brown.
• Served hot with a sauce of your choice.
