ENTAJ Curry chicken with ginger and safflower

4 persons per serving
Preparation time: 1 hour


ENTAJ whole chicken 1 kg
Finely chopped parsley  1/2 cup
Yogurt 1 kg
Vegetable oil 1/4 cup (60 ml)
Onions  2
Garlic  4
Chili 4
Water 1 cup (250 ml)
Flour 2 tbsp
Salt, curry, cinnamon, safflower, ginger and coriander (as desired)

How to prepare it:

• Cook the ENTAJ chicken in the oven for 40 minutes or until it becomes red at a temperature of 180°C. 
• Put the flour in a bowl, add a little bit of water and stir until the mixture is soft. Put the yogurt and stir. Then add water and stir again. Add them and the remaining ingredients over the chicken; the chopped parsley, sliced onions, pepper, finely chopped garlic and spices and stir until the mixture starts boiling.
• Reduce the heat, cover the pot and leave it on the fire for half an hour with the continuation of the process of stirring every five minutes.
• Serve the ENTAJ curry chicken hot with cooked Saudi rice and vegetables.
